How to make strawberry syrup

It’s super easy! First, roughly chop up the strawberries, small enough to fit through a straw. Keep in mind they’ll shrink a bit when cooking them. If you aren’t a fan of texture, you can always toss the strawberries in the blender and blend until they’re almost like a salsa consistency. Don’t puree them.

Then add them to a pot with sugar and lemon juice, and cook for 10 minutes, stirring frequently. The strawberries will release liquid and become very soft.

Can I use frozen strawberries for strawberry syrup?

You can absolutely use frozen strawberries for strawberry syrup. When I tried them for this recipe I noticed that they released more liquid but that is totally fine. It’s just more syrupy. Just chop them from frozen, or if they’re too hard, you can microwave them until they’re softer.

What plant milk should I use?

Oat milk, coconut milk, or almond milk are all great options. I used oat milk because it is creamier than almond milk and I prefer the taste. Aim for something that will compliment the taste of the strawberries, like nut based milk rather than soy or chickpea based milk.

  • Fresh strawberries – Choose the ripest strawberries you have for optimal flavour. You can also use frozen strawberries, see my note on frozen strawberries above.
  • White sugar For added sweetness. You can use brown sugar, or any natural sweetener like maple syrup if you prefer.
  • Lemon juice – Tartness to balance the sweetness
  • Plant milk – I used oat milk, you can use any plant milk you have. I would recommend nut-based milk or coconut milk for optimal flavour.

Instructions

  • Prepare ice cubes if you want your strawberry milk to be ice cold.

Wash and dry the strawberries, then remove the stems. You can use a small knife to cut out the white centre which can sometimes taste bitter.

Once the strawberries are simmering, turn the heat down to medium low and let it cook for 10-12 minutes, stirring occasionally to prevent burning.

The strawberries should release a lot of liquid and become very soft. Remove from the heat and set aside to chill for 15-20 minutes.

Add a tablespoon or two to a glass and use the back of a spoon to press the strawberry syrup up the sides of the glass.

The strawberry syrup can last in the fridge for up to 5 days.

To freeze the strawberry sauce, let it cool and then store it in an air tight container or freezer bag in the freezer for 3-6 months. To thaw, set the container or bag in a large bowl of lukewarm water for 30 minutes. Use as you would fresh strawberry sauce.

If you have mixed the strawberry sauce and plant milk together, you can store it in an air tight container in the fridge for up to 2-3 days.

  • The strawberries should become very soft, the mixture should be syrupy and look like jam. Set aside to cool for 15-20 minutes.

  • Add a tablespoon or two of the strawberry sauce to a glass and use the back of a spoon to push it up the sides to create a pattern.

  • Fill the glass with plant milk and stir with a straw.
