This iced strawberry latte is creamy, sweet, and bursting with juicy, fresh strawberry flavor. A sweet and fruity strawberry simple syrup, homemade strawberry milk, and freshly brewed blonde espresso (or matcha) make this pink drink a fun and unique morning treat.

This strawberry latte uses oat milk, making it dairy free and vegan!

Strawberry and coffee? These may seem like an odd combo, but the two work so well together! The sweet, fruity taste of the strawberries and the creamy milk pair so well with the rich and bold espresso flavor. Here are a few more reasons you’ll love this refreshing drink!

Ingredients

Today we’re using a handful of simple ingredients to make this Strawberry Latte. These ingredients will also make a homemade strawberry simple syrup that’s sweet and packed with fresh berry flavor.

For the DIY Strawberry Syrup:

  • Fresh Strawberries, or frozen
  • White Cane Sugar or Brown Sugar
  • Hot Water

To Make the Iced Latte:

  • Freshly Brewed Espresso or Matcha, if making a strawberry matcha latte
  • Oat Milk, or milk of choice
  • Ice Cubes of Choice (I made ice cubes from the strawberry milk in this recipe!)

Substitutions

To Make a Sugar Free Strawberry Latte

While I haven’t tried this substitution in this particular recipe, I recommend subbing the cane sugar or brown sugar in the syrup for Swerve’s Granulated or Brown Sugar or another sugar substitute.

I’ve used Swerve’s products in other recipes, and it performs very similarly to real sugar. You could also try subbing maple syrup for the sugar, however I haven’t tried this substitution and I can’t guarantee results.

Can I use strong brewed coffee instead of espresso?

Yes, you can use bold coffee, however, please note that the latte won’t taste as bold or intense.

If using bold coffee, I recommend stirring in 1 tsp of instant espresso per serving to help it have a stronger flavor. I also recommend using coffee ice cubes in the latte to help enhance the coffee flavor.

Can I use matcha green tea instead of espresso?

Absolutely! You can use this recipe to make tasty strawberry matcha lattes. Whisk 1 tsp Ceremonial Grade Matcha and 2-3 tbsp hot water to create the matcha. Make the rest of the recipe as stated below.

What kind of milk can I use?

Another dairy-free milk can be substituted for oat milk. I recommend using soy milk, cashew milk, or coconut milk (from a carton not a can), to get the creamiest texture.

You could also use almond milk, but the latte won’t be as creamy. Oat milk can also be swapped 1 for 1 with dairy based milks.

Add Ins

Other flavors can be added to this latte. Below are some really fun ideas:

  • Rose Syrup: rose petals or rose simple syrup can be added for a floral and bold flavor addition
  • Sakura: also known as cherry blossom syrup would pair wonderfully with the strawberry
  • Vanilla Extract: a splash of vanilla would add some sweet, aromatic flavor
  • Brown Sugar Boba: for a fun treat, add boba at the bottom of your iced latte to make strawberry milk bubble tea

  • Blender or Food Processor, to make the strawberry milk

Step-by-step Instructions

To Make the Homemade Strawberry Syrup:

STEP 1: In a small saucepan or pot, add the diced strawberries, sugar, and hot water. Simmer over low heat for 5 to 10 minutes.

📌 TIP: Do not smash the strawberries! This will make them more difficult to strain and scoop out.

Simmering the Strawberry Syrup

STEP 2: Gently stir the mixture until the sugar dissolves, the syrup becomes red, and the strawberries look paler in color. The syrup should be slightly thicker in consistency but will continue to thicken as it cools.

STEP 3: Scoop the strawberries out. Pour the syrup through a metal sieve into a sealable heat-proof jar or container. Cool at room temperature.

To Make Dairy Free Strawberry Milk with Oat Milk:

STEP 1: Add the simmered strawberries and 2 1/2 cups of oat milk to a blender.

STEP 2: Blend on high for 1 minute. This will combine the strawberry puree and oat milk.

You can also add 2-3 tbsp of strawberry syrup to the milk if you’d like! Strain through a fine metal sieve into a glass jar to remove the seeds and pulp. Place in the fridge until ready to use.

🧊 Strawberry Milk Ice Cubes: you can pour some of the strawberry milk into ice cube trays to make fun strawberry-flavored ice for the latte! Place the trays in the freezer for 2-3 hours or until set.

To Make the Iced Strawberry Latte

STEP 1: In a serving glass, add 1-2 tbsp of strawberry syrup, a handful of strawberry or oat milk ice, and 6-8 oz of the strawberry oat milk (or regular oat milk).

STEP 2: Brew a double shot of blonde espresso or prepare your matcha. To a separate jar with a lid, add a handful of ice and pour the espresso on top. Optional- add 1 tbsp of strawberry syrup to the espresso. Seal the jar and shake well to cool the espresso down.

STEP 3: Pour the shaken espresso over the strawberry oat milk, ice cubes and syrup.

Serving the Latte

The vegan strawberry milk can be served on its own or it can be combined with coffee/matcha to make this amazing drink!

The latte is so tasty topped with another drizzle of strawberry syrup, fresh-cut strawberries or dried strawberries. You could even put whipped cream or coconut cream on top. It’d be great as a morning treat or an afternoon pick-me-up.

I added heart-shaped strawberry milk ice cubes to mine which made this pink drink perfect for Valentine’s day!

How to Store the Strawberry Syrup & Strawberry Oat Milk

Transfer the strawberry syrup to a clean airtight container or jar. The dairy free strawberry milk should also be stored in a clean sealable jar.

📌 TIP: for the best results, make sure the container has been sterilized or cleaned very well prior to filling it. This will help the syrup last longer

Let the syrup cool completely at room temperature. Once cooled, transfer the syrup to the fridge.

The syrup can be stored in the fridge for 1-2 weeks. If the syrup is placed in the fridge prior to cooling completely, it may crystallize.


The strawberry milk can be stored in the fridge for about 1 week.

Follow these simple tips for the best results!

  • Add as much or as little strawberry simple syrup as you’d like: adjust the amount of sweetness by adding more or less syrup to taste
  • Use freshly brewed blonde espresso or ceremonial grade matcha: use high quality espresso or matcha for the best flavor.
  • Pick an extra creamy oat milk for the strawberry milk: Some oat milks have a reduced fat content, but for a creamy texture pick one that says either original oat milk or extra creamy on the carton.
  • Use Oat Milk or Coffee Ice Cubes: to keep the latte from being watery.

FAQ

Can I use culinary grade matcha in this strawberry latte?

While ceremonial grade matcha is the best, you can use culinary grade matcha. However, note that the flavor won’t be the same as what you’re used to from your favorite coffee shop.

What milk should I use to make a strawberry latte?

I recommend using a milk with a slightly higher fat content for the creamiest texture most similar to whole milk. I prefer oat milk, but soy milk, cashew milk, or coconut milk will also work. Dairy free milk can be swapped with a 1:1 ratio with regular dairy milk.

How many shots of espresso should I use in the latte?

I recommend using a double shot of espresso per serving, however, you can use as much or little espresso as you’d like.

Ingredients

Strawberry Milk & Strawberry Simple Syrup

  • 1 lb fresh strawberries, diced (about 2 ½ cups)
  • ¼ cup (50g) granulated white sugar or brown sugar
  • ¼ cup (2 oz) hot water
  • 2 ½ cups (20 oz) extra creamy oat milk, or milk of choice

Latte

  • 2 shots freshly brewed blonde espresso or sub matcha (see notes)
  • 2-3 tbsp strawberry simple syrup (see above)
  • 6-8 oz plain unsweetened oat milk or strawberry oat milk (see above)
  • Coffee, Oat Milk, or Strawberry Milk Ice Cubes

Instructions

Strawberry Simple Syrup

  1. In a small saucepan or pot, add the diced strawberries, sugar, and hot water. Simmer over low heat for 5 to 10 minutes. Do not smash the strawberries!
  2. Gently stir the mixture until the sugar dissolves, the syrup becomes red, and the strawberries look paler in color. The syrup should be slightly thicker in consistency, but will continue to thicken as it cools.

Optional- Make the Strawberry Milk

  2. Blend on high for 1 minute. Taste for sweetness. Add 1-2 tbsp of strawberry syrup taste. Strain through a fine metal sieve into a glass jar to remove the seeds and pulp.
  3. Refrigerate the strawberry milk until chilled or ready to serve.

Make the Latte

  1. In a serving glass, add 1-2 tbsp of strawberry syrup, a handful of oat milk ice, and 6-8 oz of the strawberry oat milk (or regular milk).
  2. Brew a double shot of blonde espresso. Or prepare your matcha- see notes.
  3. To a separate jar with a lid, add a handful of ice and pour the espresso on top. Seal the jar and shake well to cool the espresso down.
  4. Pour the shaken espresso into the serving glass over the strawberry oat milk, ice, and strawberry syrup. Top with another drizzle of strawberry syrup and fresh cut strawberries.

Notes

Matcha Strawberry Latte:

You can make this into a strawberry matcha latte.

Whisk 1-2 tsp Ceremonial Grade Matcha and 2-4 tbsp hot water to create the matcha.

The amounts will depend on how strong you prefer your matcha to be. Make the rest of the recipe as stated above.

Strawberry Milk Ice Cubes:

You can pour some of the strawberry milk into ice cube trays to make fun strawberry flavored ice for the latte! Place the trays in the freezer for 2-3 hours or until set.
