I know the combination of strawberries and coffee seems a bit unconventional but here me out.

The natural sweetness of the strawberries perfectly balance the creaminess of the oat milk and bold espresso.

Creating this oat milk strawberry latte requires just a few basic ingredients: espresso, oat milk, and a homemade strawberry simple syrup that's both sweet and full of vibrant fresh strawberry flavor.

Espresso:A latte is a made up of one or two shots of espresso and steamed milk. I use a Nespresso.

Oat Milk: I choose oat milk for my homemade lattes due to its creamy texture, although I also frequently opt for almond milk or soy milk. Feel free to use your preferred plant-based milk.

Strawberry Simple Syrup: While strawberries and coffee may sound unusual, the combination is surprisingly delightful and refreshing—imagine a strawberries and cream latte.

The strawberry syrup is made up of three essential ingredients: fresh strawberries, organic cane sugar, and water.

Step 1: Combine the organic cane sugar, water, quartered strawberries, and vanilla to a saucepan and stir together.

Step 2: Bring the mixture to a slight boil then immediately reduce to a simmer over medium for8-10 minutes.

Note: Consider using a medium or dark roast for your espresso; I usually prefer a stronger option to complement the fresh strawberries and creamy milk. Darker roasted beans also tend to be less acidic, which lends a smoother quality to the latte.

Substitutions & Variations

Making coffee at home has its perks– you get to customize it to your taste, adjusting the sweetness and creaminess just the way you like it.

And, it's more cost-effective!

Espresso: If you don't have an espresso machine, you can replace the double shot of espresso with ½ cup of strong coffee or cold brew. Adjust the amount of milk accordingly.

Oat Milk:While oat milk is my personal favorite, almond milk, cashew milk, and soy milk are excellent alternatives. Feel free to choose your preferred plant-based milk!

Strawberry Simple Syrup: Not a fan of strawberries? Try Iced Cinnamon Dolce Latte or Caramel Oat Milk Latte instead!

Storage

Store leftover strawberry simple syrup in an airtight jar in the fridge for up to2 weeks orfreeze forup to 2 month.

Use leftover syrup by drizzling it over pancakes, waffles, ice cream, or incorporate it into your coffee and co*cktails.

Brewed espresso should be enjoyed immediately.

Tips & Tricks

Use fresh strawberries. Frozen strawberries will work but make sure to thaw them so you don't introduce to much water.Fresh strawberries are best.

Avoid using a spoon to press or mash the strawberries. Allow the syrup to naturally strain through the mesh to maintain clarity and prevent cloudiness.

Use medium or dark roast: I usually opt for a stronger espresso to create a contrast with the fresh strawberries and creamy milk. Darker roasted beans also tend to be less acidic, resulting in a smoother latte.

The strawberry simple syrup has sugar in it so use an unsweetened oat milkto be completely in control of the sweetness.

  • 1 cup Organic Cane Sugar

  • Pinch of Kosher Salt

  • 1-2 tablespoons Strawberry Syrup to preference
  • Ice Cubes
  • ½ cup Oat Milk
  • Double Shot of Espresso

Instructions

  • Wash, dry, and quarter the strawberries. You will need about 2 cups.

  • Combine the organic cane sugar, water, quartered strawberries, and vanilla to a saucepan and stir together.

  • Bring the mixture to a slight boil then immediately reduce to a simmer over medium for 8-10 minutes.

  • Position a fine-mesh strainer over a bowl or measuring cup, and carefully pour the syrup through it. Avoid using a spoon to press or mash the strawberries; instead, allow the syrup to naturally strain through the mesh to maintain clarity and prevent cloudiness.

  • Allow the syrup to cool to room temperature.

  • Add 1 tablespoon strawberry simple syrup to the bottom of a tall glass.

  • Fill with ice and pour in the oat milk.

  • Brew a double shot of espresso and pour over the oat milk. Stir and taste to adjust sweetness and flavor.

  • If making a hot strawberry latte,frothandsteamthe milk and omit the ice.

Notes

This simple syrup recipe makes about 1 ½ cups.

Allow the syrup to cool to room temperaturebefore using it for iced drinks. It can be immediately added to a hot drink but allowing it to cool before adding it over ice will prevent it from crystallizing.

Allow the strawberry simple syrup to cool completely then store in the refrigerator in an airtight container forup to 2 weeks.
